APPLE CRUMBLE WITH GRANOLA
Ingredients:
For the apple filling:
4 Large cooking apples
1 tsp Butter or coconut oil
1 tbsp Maple syrup
For the crumble topping:
80g Chilled butter or chilled coconut oil
100g Buckwheat flour
30g Oats
1/2 tsp Cinnamon, ground ginger and ground nutmeg
40g Coconut sugar
Method
Preheat the oven to 180 C (160C Fan)
Peel, core and finely slice the apples
Melt the butter or oil in a large pan then add the chopped apple
Keep giving the apples a stir to avoid them sticking to the bottom of the pan. Allow them to cook down into a soft, gooey mash.
Meanwhile, make the topping by cubing the butter or coconut oil and placing in a bowl with the flour.
Using the tips of your fingers, rub the flour with the butter/coconut oil until it starts to form rough crumbs (I like to leave some bigger chunks to give the crumble more texture). You can do this with a food processor but you definitely don’t get the best texture so get those hands in!
Add the spices and coconut sugar to the crumb mixture and stir well.
Once the apples are cooked, place them in a large oven proof dish and spread evenly (I used a 20cm diameter circular dish).
Sprinkle the crumble mixture over the top and spread around.
Place in the oven for 30 minutes.
Remove from the oven and sprinkle the granola over before serving.
