APPLE CRUMBLE WITH GRANOLA

After a lovely weekend walk in the fresh air or if you’re getting cosy on a Sunday night, nothing beats the comfort that comes from tucking into a bowl of apple crumble. And if you want to add a little upgrade to your crumble? Look no further! Here is our recipe for a hearty apple crumble that is also refined sugar free and of course, topped with our crunchy Original Nutty Granola! The best bit about an apple crumble is of course the crumble bit, there’s no kidding anyone with that! So we’ve used buckwheat flour to form the base of the topping which is a great source of plant based protein and is also naturally gluten free. The sweetness comes a from little coconut sugar that also brings a great depth of flavour to the crumble. Combined with our Original Nutty Granola, this topping is a sure fire hit without the guilt of a traditional crumble.

Ingredients:

For the apple filling:

4 Large cooking apples

1 tsp Butter or coconut oil

1 tbsp Maple syrup

For the crumble topping:

80g Chilled butter or chilled coconut oil

100g Buckwheat flour

30g Oats

1/2 tsp Cinnamon, ground ginger and ground nutmeg

40g Coconut sugar

80g Original Nutty Granola

Method

  1. Preheat the oven to 180 C (160C Fan)

  2. Peel, core and finely slice the apples

  3. Melt the butter or oil in a large pan then add the chopped apple

  4. Keep giving the apples a stir to avoid them sticking to the bottom of the pan. Allow them to cook down into a soft, gooey mash.

  5. Meanwhile, make the topping by cubing the butter or coconut oil and placing in a bowl with the flour.

  6. Using the tips of your fingers, rub the flour with the butter/coconut oil until it starts to form rough crumbs (I like to leave some bigger chunks to give the crumble more texture). You can do this with a food processor but you definitely don’t get the best texture so get those hands in!

  7. Add the spices and coconut sugar to the crumb mixture and stir well.

  8. Once the apples are cooked, place them in a large oven proof dish and spread evenly (I used a 20cm diameter circular dish).

  9. Sprinkle the crumble mixture over the top and spread around.

  10. Place in the oven for 30 minutes.

  11. Remove from the oven and sprinkle the granola over before serving.
