CINNAMON & NUTMEG BANANA LOAF
Ingredients
140g Wholemeal flour
100g Self-raising flour
1 tsp Bicarbonate of soda
1 tsp Baking powder
300g Mashed banana
4 tbsp Honey
3 Eggs
150ml Fat free yoghurt
150g Dark chocolate (extra for top)
1 tsp Cinnamon (extra for top)
1/2 tsp Nutmeg
Method
1. Grease & line a loaf tin with baking paper
2. Mix the flour, salt, baking powder, bicarbonate of soda together and set aside
3. In another bowl, mix the mashed bananas, honey, eggs & yoghurt
4. Stir into the dry ingredients then add the choc chips
5. Pour the batter into the lined tin, sprinkle a little extra cinnamon on top along with a little extra dark chocolate.
6. Bake at 180C (160C fan) for 1hr, check and return to the oven if it requires a little more.
