BANANA BLONDIES

 

Banana and Chocolate always make the perfect combo! We thought we’d share our fav blondie recipe that is super simple to make, but tastes awesome and uses banana as the main sweetener. Happy baking!

Ingredients:

3 Ripe Bananas

60ml Plant milk

50g Coconut sugar

3 tbsp Almond Butter

100g Ground Almonds

1 tbsp Chia Seeds

100g Flour (GF if required)

1tsp Baking powder

1 tsp Mixed spice

25g Pecans

70g Dark choc chips (extra for drizzling - optional)

Method:

  1. Pre-heat the oven to 160c. Line a 20cm square tin with baking parchment.

  2. Mash the bananas using a fork then add in the milk, coconut sugar, almond butter and ground almonds.

  3. Stir well and create a smooth paste. Add in the chia seeds, flour, baking powder and mixed spice. Stir well again before adding in the choc chips & pecans and mixing once last time.

  4. Pour into the lined tray, spread evenly then place in the oven for 25-30 mins.

  5. Remove from the oven and allow to cool for 15 mins before drizzling with melted chocolate* and slicing.

*to melt the chocolate, we recommend using a bain marie method. Place the chocolate in a glass bowl over a gently simmering pan of water. Stir and allow to melt, drizzle over the blondie whilst still hot and runny.
