CHEWY GRANOLA BARS

 
 

Ingredients

200g Oats

50g Chopped Nuts

25g Sunflower Seeds

25g Pumpkin Seeds

200g Chopped Pitted Dates

100g Almond Butter

50ml Hot water

Pinch of sea salt

Method

1. Place the chopped dates in a microwave safe bowl with the water and the nut butter

2. Heat for one minute then remove from the microwave

3. Using the back of a metal spoon, mash the dates with the water and the almond butter to make a rough paste, then add in the salt and stir.

4. Add the dry ingredients and mix it well to form a stiff mixture

5. Cut a large sheet of baking paper and place the mixture onto one half of the sheet. Fold the other half over the mixture and press down to flatten the mixture out. You can use a rolling pin to help get it nice and smooth (or a large glass works well!)

6. Once you've formed a large square of flat mixture, carefully place in the fridge for at least one hour.

7. Remove from the fridge and slice into fingers... enjoy! .
